Simnel Cake is a fairly rich fruit cake that's covered in marzipan (or almond paste) often covered in chocolate. Traditionally the cake is stamped with the figure of Christ and decorated with 11 marzipan balls to represent the 11 apostles (excluding Judas). Traditionally it was ven by servant girls to their mothers when they went home on Mothering Sunday but today it's a more general Easter speciality.
