This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Scald recipes added to this site.

These recipes, all contain Scald as a major wild food ingredient.

Scalding is the process of heating milk until it's just below the point of boiling (this is when some movement can be seen at the sides of the pan but there is no overall bubbling).

The term is also used for cooking cloths such as muslin, cheesecloth etc which are immersed in clean boiling water to sterilize them.
