Codling Apples are varieties of tart cooking apples that were are mid to late season varieties and which were particularly admired in the Georgian and Victorian periods. They are aromatic and yellow in colour and keep their shapes well when cooked. As a result they are particularly suited for pickling. The English Codling (image, left) is one of the oldest of British varieties and is still available today. The Keswick codling (image, right) is a more uniform apple developed in Keswick, Lancashire during the 18th century that is slightly sweeter and has plenty of pectin to use as a base for jellies.
