These recipes, all contain Emperors Mint as a major herb flavouring.

Emperor's mint, Micromeria sp (also known as Roman Mint) a perennial herb and member of the Lamiaceae (mint) family. However, rather than being a true mint Emperor's mint is more closely related to the savorys and is similar to Jamaican mint (Satureja viminea). It is a native of Italy and grows to about 25cm high. It produces small roundish grey-green leaves that are highly aromatic and generates small pale pink/grey flowers in summer.

According to the legend this plant was originally found flourishing amidst the ruins of Emperor Hadrian’s remarkable summer villa near Rome. It has a very distinct slightly acrid note and is quite pungent. It makes an excellent tea and can be used in Italian cooking. It's particularly good in tomato-based sauces.

The plant is used as an herb in Italy and the Adriatic region to flavour soups, salads, and egg dishes, and in stuffing for chicken and wild game. Finely chopped leaves are often added to pasta sauces and sprinkled over meats before grilling. The flavour is slightly medicinal, with notes of mint, thyme and savory. In Italy, as well as being added to tomato-based sauces the chopped leaves are also sprinkled over meats before grilling.

The plants do best in full sun and sandy soil, but are quite at home being grown in pots.
