Sardas sic Facies (Sardines are Prepared Thus) is a traditional Ancient Roman recipe for a classic dish of sardines served in a herbed and spiced sauce dressing with chopped hard-boiled eggs, vinegar and olive oil. Sardas sic Facies (from Vinidarius' Apici Excerpta) xii
Sardas sic Facies: Teres piper, ligustici semen, origanum, cepam siccam, ovorum coctorum vitella, acetum, oleum. haec in unum temperas et perfundes.
Translation
Sardines are Prepared Thus: Grind pepper, lovage seeds, oregano, dried onion and hard-boiled eggs [in a mortar]. Blend with vinegar and olive oil then pour over [the sardines].
For the Dressing
1/2 tsp freshly-ground black pepper
1 tsp lovage (or celery) seeds
1/2 tsp dried oregano, crumbled
2 tbsp dried onion
2 hard-boiled eggs, very finely chopped
6 tbsp extra-virgin olive oil
3 tbsp white wine vinegar (or cider vinegar)
Method:
Pound together the black pepper, lovage (or celery) seeds, oregano and dried onion in a mortar. Add the hard-boiled eggs and pound to a paste. Now mix in the olive oil and vinegar until you have a smooth dressing.
Arrange the sardines on a serving dish, drizzle over the egg dressing and serve.
