Ofellas Garaton (from Vinidarius' Apici Excerpta) vi
Ofellas Garaton: Lasar, zingiber, cardamomum et uno acetabulo liquaminis misces cum his omnibus tritis et ibi ofellas coques.
Translation
Morsels with Fish-sauce: [Take] laser, ginger, cardamom and mix all these ground seasonings with 75ml liquamen. Cook the pieces of meat [in this sauce].
Modern Redaction
Ingredients:
225g choice cuts of roast lamb, pork, beef or kid goat cut into bite-sized pieces
Pound together the asafoetida and ginger in a mortar and moisten with the fish sauce. Scrape into a pan, add the meat then bring to a boil. Reduce to a simmer, add the pieces of meat and continue cooking for about 15 minutes, or until the meat is hot and the sauce is thickened.
Arrange the meat in a serving dish and spoon over some of the sauce. Serve immediately.
