Ofellas Garatas (from Vinidarius' Apici Excerpta) iii
Ofellas Garatas: Ponis ofellas in sartagine, adices liquamen libram unam, olei similiter, mellis aliquantum et sic frigis.
Translation
Braised Morsels: Place morsels of meat into a frying pan. Add a measure of liquamen, similarly of olive oil, some honey and fry.
Modern Redaction
Ingredients:
225g choice cuts of cooked lamb, pork, beef or kid goat cut into bite-sized pieces
4 tbsp liquamen (fish sauce)
4 tbsp olive oil
4 tbsp runny honey
Method:
Heat the olive oil in a pan, add the meat and fry gently until cooked heated through (about 20 minutes). Now add the fish sauce and honey. Stir the meat in this mixture until well coated.
