Laridi coctura (from Apicius' De Re Coquinaria) VII, ix, 4


Laridi coctura: tectum aqua cum multo anetho coques, oleum modicum distillabis et modicum salis.

Translation


Boiled Bacon. Cook covered in water and with plenty of dill. Sprinkle with a few drops of oil and a little salt.

Modern Redaction

Ingredients:

1 bacon joint (about 1kg)
1 bunch of dill

Method:

Place the bacon joint in a large pan, coarsely chop the dill and add to the pan then cover with plenty of water. Bring to a boil, reduce to a simmer then cover the pan and cook for about 80 minutes, or until the bacon is tender. Serve hot.
