Translation
[Sauce] for Tree Mushrooms: [Blend] pepper, caroenum, vinegar and oil.
Modern Redaction
The exact mushrooms referred to here as 'tree mushrooms' is unclear, but I believe that the recipe calls for bracket fungi, such as beefsteak, chicken of the woods, dryad's saddle etc (but any firm-fleshed fungus will work).
Ingredients:
200g firm mushrooms, thickly sliced or cubed
1 tsp freshly-ground black pepper (or to taste)
60ml caroenum
2 tbsp white wine vinegar
1 tbsp olive oil
Method:
Bring a pan of lightly-salted water to a boil. Add the mushroom pieces and cook until tender (between 5 and 30 minutes, depending on the type). When tender, drain in a colander then blot on kitchen paper.
Arrange the mushroom pieces in a serving dish. Heat the caroenum and white vine vinegar in a pan and whisk in the black pepper and olive oil then pour over the mushrooms and serve.
