This recipe, though not entirely 'authentic' is still derived from period sources. Loosely based on the recipes of the Roman fourth-century CE gastronome,
Apicius (particularly
Ova Sfongia ex Lacte) the recipe is more based on how one might arrive at a dish described in the poem 'Invitation to friends for dinner' by the first-century CE poet, Martial.
Ingredients:
3 eggs
270ml milk
30ml olive oil
2 tbsp clear
honey
generous twist of black pepper
Method:
Mix the eggs and milk and whisk together. Meanwhile add the olive oil to a pan and heat. When the oil is hot pour in the egg mixture.
Wait until this is completely cooked and coloured on one side then turn it out onto a serving dish and coat with the honey and a twist of black pepper.
