Original Recipe
Cucumeres rasos: sive ex liquamine, sive ex oenogaro: sine ructu et gravitudine teneriores senties.
Translation
Peeled Cucumbers: [Season them] either with
liquamen or with
oenogarum, you will find them more tender and they will not cause belching or heaviness.
In this recipe
oeogarum is a condiment made from a 1:1 mixture of
liquamen (fish sauce) with sweet white wine that's been boiled to reduce its volume to about 60% of the original volume.
Ingredients:
1 cucumber, peeled and finely sliced
60ml oenogarum
black pepper, to taste
Method:
Combine the ingredients in a bowl, toss to combine then allow to sit in the refrigerator for at least 1 hour before serving.
