Assaturam: assam a furno simplicem salis plurimo conspersam cum melle inferes.

Translation

Roast Meat: Roasted plain in the oven and sprinkled with plenty of salt. Serve with honey.

Modern Redaction

Ingredients:

1 roasting piece of lamb, goat or mutton
salt
honey

Method:

Prepare the meat, sit on a rack in a roasting tin then transfer to an oven pre-heated to 220°C and roast for 30 minutes. Reduce the oven temperature to 160°C and continue roasting for 30 minutes per kg (for medium).

About 40 minutes before the roast is ready, sprinkle the salt over it. Roast for 10 minutes more then spread over the honey and finish cooking for the final 30 minutes, basting frequently with the honey. Allow to rest for at least 20 minutes before carving and serving.
