Aliter Ofellas (from Vinidarius' Apici Excerpta) v


Aliter Ofellas: In liquamine frigantur et calidae melle unguantur et sic inferantur.

Translation


Roast Morsels, Another Way: Fry the pieces of meat in liquamen. When hot, smear with honey and serve.

Modern Redaction

Ingredients:

225g choice cuts of roast lamb, pork, beef or kid goat cut into bite-sized pieces

100ml liquamen (fish sauce)
60ml runny honey
1 tbsp water

Method:

Combine the liquamen (fish sauce) and meat in a pan then bring to a boil. Reduce to a simmer, add the pieces of meat and continue cooking for about 15 minutes.

Heat the honey and water in a small pan until molten. When the meat has cooked, drain and arrange on a serving dish. Brush with the honey then spoon over a little of the liquamen sauce and serve immediately.
