Zuppa di Ciliege (Stewed Cherries)

Zuppa di Ciliege (Stewed Cherries) is a traditional Sammarinese (from San Marino) recipe for a classic dessert of cherries stewed in white wine that's served on bread and garnished with almonds. Method:

Pit the cherries and combine in a pan with the cinnamon, orange zest, vanilla pod and lemon juice. Bring to a simmer and cook for about 10 minutes, or until soft. Take off the heat and remove the vanilla pod and cinnamon.

Take 200g of the cherry mixture and purée in a blender. Add the white wine and blitz to combine (this will thin the mixture). Pour the purée back into the cooked cherries and stir to combine.

Allow to cool then spoon over the bread slices, serve garnished with the sliced almonds.
