Zamé

This is the Malian version of the dish that is known as
riz au gras (literally 'fat rice') elsewhere in West Africa.
Ingredients:
500g rice
12 small onions
groundnut oil
3 tomatoes
1 tbsp tomato purée
100g meat
2 garlic cloves, peeled and crushed
1 maggi cube
salt and freshly-ground black pepper, to taste
Method:
Wash the rice thoroughly then set aside to drain. Once drained, place water to boil in a pot, put the rice in a steamer and cook for about 20 minutes, or until just tender.
In the meantime, peel and coarsely chop the onions then pound to a paste in a mortar. Remove two ladlesful of the water used to cook the rice and pour into a bowl.
Blanch, peel and chop the tomatoes then add to the bowl with the water then stir in the meat, pounded onions and Maggi cube.
Heat the oil in a large pan and carefully add the tomato and meat sauce mixture. Stir in the crushed garlic and season to taste with salt and black pepper. Bring to a simmer and cook for about 15 minutes, whilst the rice finished steaming.
Remove the rice from the steamer, fluff with a fork and add to the stew ingredients. Adjust the seasonings to taste then simmer, covered, over low heat until the meat is tender and the mixture is almost dry.
Serve hot, spooned onto a large serving dish.
