Yataklete Kilkil (Spiced Vegetables)

Ingredients:

700g new potatoes
1 head of broccoli, stem included
5 large carrots, sliced in small rounds
1 small cauliflower, coarsely chopped
1 medium onion coarsely chopped
1 tsp Berbere spice
120ml ghee

Method:

If the potatoes are large quarter them, otherwise leave whole. Remove the tough outer fibre of the broccoli stalk then chop the entire head of broccoli. Stem the potatoes, broccoli stem, carrots and cauliflower over boiling water. After 10 minutes add the broccoli florets and steam for five more minutes.

In a heavy pan fry the onions and berbere spice in half the ghee until they are transparent. Mix the steamed vegetables with the onions (omit the broccoli florets). Cover and cook for eight minutes, stirring frequently. Add the broccoli and cook for a further five minutes.

Serve with Injera and pass the remaining ghee around the table as a sauce.
