Yam Curry is a traditional Vanuatu recipe for a curry of yam in a coconut milk base with onion coriander, chillies and curry powder served topped with green beans and crushed peanuts. The full recipe is presented here and I hope you enjoy this classic Vanuatu version of: Yam Curry.

Ingredients:
1 small Yam
3 Brown Coconuts (or a tin of coconut cream)
1 medium Onion
5 Garlic cloves
8 Cherry Tomatoes
2 medium fresh Chillies
Fresh Coriander
1 Spring Onion
1 tsp Cumin Powder
1 tsp Paprika Powder
1 tsp Polynesian curry powder
8 green beans, boiled until tender
Salt and freshly-ground black Pepper, to taste
Cooked Peanuts (to garnish)
Method:
Peel the yams and slice into 1cm pieces. Place into a pot of hot water and then boil for approx. 15-20mins, then drain.
Scrape coconuts and squeeze to make coconut cream (put in bowl to use later).
Dice the onion, garlic, tomato, chilli and chop the coriander leaves.
In a pan add a little vegetable oil. When hot use to fry the onion, garlic, tomato and chilli for about 4 minutes or until the onion is just soft. Stir in the coriander leaves then scatter over the cumin, paprika, curry powder.
Stir everything together for 2-3 mins.
Pour in the coconut cream, bring to a boil and cook for 5 minutes.
Add the cooked and drained cubed yam pieces, season to taste and cook for 2-3 minutes, or until everything is warmed through.
Turn onto a warmed serving dish, garnish with the green beans and crushed peanuts and bring to the table.
