Yaji (also known as suya) is a common spice rub in Nigeria for barbecued meats and meat spiced with yaji (often goat) is commonly found barbecued as a street food. Yaji is the Nigerian equivalent of Ghanaian
tankora powder.
Ingredients:
12 tbsp kuli kuli (peanut flour) — this must be dried powder, with no oil remaining (for an authentic kulikuli recipe, see this site's guide to making
Ghanaian kulikuli)
1 1/2 tbsp
ginger powder
1 1/2 tbsp hot chilli powder (typically
Scotch Bonnet chillies, dried and ground to a powder)
1 tsp salt
1 tsp Maggi (or other stock) cube
ground cloves, ground garlic, ground cumin (optional)
Method:
Mix together the peanut flour, ginger powder and chilli powder in a bowl. Season with the salt and Maggi then store in an air-tight jar.
This is the basic recipe, some add ground cloves, dried and ground garlic and ground cumin.
Typically it's used to season beef before roasting. It is also used as a flavouring for a range of soups and stews.
