Kulikuli (peanut balls) is a traditional Nigerian recipe for a snack of spiced peanut flour and onion balls that are deep fried. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Peanut Balls.

Ingredients:
450g roasted peanuts
60ml groundnut oil
1 small onion, finely chopped
1 tsp cayenne pepper
1 tsp salt
oil for frying
Method:
Grind or pound the peanuts, adding just enough oil to make a smooth paste. Squeeze the mixture with wet hands to remove any excess oil. Fry the onions and cayenne pepper in 1 tbsp of oil until the onions are golden brown (about 6–8 minutes).
Knead the onion mixture into the groundnut paste and when thoroughly mixed shaped into 3cm diameter balls (add a little water if you need help holding them together).
Drop the balls into a deep layer of hot oil in a wok, or flatten and shallow fry in a frying pan. Cook for 2 to 3 minutes, until the outsides are crisp. They can be served as a snack or as an accompaniment to a main course.
