This is a recipe for anyone who likes the pungency of wasabi and/or mustard. It should be just enough to tickle the nose, but not too pungent.
Ingredients:
2 x 3cm lengths of fresh wasabi, grated (or 1½ tbsp wasabi powder
2 tbsp mayonnaise
2 tbsp sour cream
3 tbsp Dijon mustard
½ tbsp Tabasco sauce
salt and black pepper to taste
Method:
Combine all the ingredients together in a small bowl and season with salt and pepper. Store in an air-tight jar and keep in the fridge (it's always best if refrigerated for at least two hours before use). It will keep for several days.
This makes an excellent accompaniment to any fried or steamed fish and also works well in a tuna sandwich.
