Warm Halloumi and Fennel Salad: A classic Cypriot salad of Halloumi cheese and fennel in an oregano and olive oil dressing.

Ingredients


200g Halloumi cheese, sliced thickly
2 fennel bulbs, trimmed and thinly sliced (reserve any leaves for garnish)
2 tbsp fresh oregano, roughly chopped
3 tbsp lemon-infused olive oil
salt and freshly-ground black pepper, to taste

Method:

Combine the Halloumi, fennel and oregano in a bowl. Drizzle over the lemon-infused olive oil and season liberally with salt and black pepper (remember that Halloumi is quite a salty cheese).

Cover the bowl with clingfilm (plastic wrap) and set aside to marinate for 10 minutes.

During this time, heat a griddle pan until almost smoking. Take out the marinated Halloumi cheese and fennel, place on the griddle pan and cook for about 3 minutes per side, or until nicely marked.

Divide the cheese and fennel between four serving plates. Sprinkle over the reserved fennel fronds and drizzle over the reserved marinade. Serve immediately.

The cheese and fennel can also be cooked on a barbecue.
