Walkie Talkies is a traditional South African dish of barbecued chicken feet (feet and heads in the original) that are marinated in a rich sauce before cooking and which is typically served as a snack accompanied by beer. Also known as Phoenix Feet, walkie talkies are a South African township dish of chicken’s feet and heads (hence the name) in a lightly-spiced sauce. They are typically served as a snack food to accompany beer. What’s presented here is a slightly more upscale version of the original dish made from chicken feet only (without the heads). Typically, they’re cooked on a braai (barbecue) but can also be cooked in a wok or pan.
Ingredients:
500g chicken feet
100ml tomato sauce (or ketchup)
60ml vegetable oil
2 tbsp soy sauce
3 tbsp
chicken spice
2 tbs
garam masala
1 tsp Worcestershire sauce
2 tbsp dried piri-piri (African birds’ eye) chillies
3 tbsp cola
100g butter
Handful of coriander (cilantro) leaves
Method:
Clean the chicken feet and if it’s not been done already pull off the outer yellow skin. Chop the chillies then crush in a mortar.
Mix together the tomato sauce (ketchup), oil, soy sauce, chicken spice, garam masala, Worcestershire sauce, cola and chillies. Add the chicken feet and rub the mixture into them. Set aside to marinate in your refrigerator for 30 minutes.
Cook the marinated chicken feet on your pre-heated braai (barbecue) for about 20 minutes, turning occasionally, until slightly charred and cooked through. Baste with any marinade left-over in the bowl as you turn.
Arrange on a plate, garnish with chopped coriander and serve with a good beer. If desired, you can heat up any left-over marinade and serve as a sauce.
