South African Braai Chicken Spice

South African Braai Chicken Spice is a traditional South African blend of spices, herbs and salt that’s traditionally used as a rub or shake for chicken prior to braaiing (barbecuing). This is a copycat version of a classic South African braai (barbecue) chicken spice blend. If you want to convert this into a piri-piri type blend add 1 tbsp hot red chillis (piri-piri [African birds’ eye chillies] to be authentic).

Ingredients:

1 tsp Sea Salt
1 tbsp Ground Maize
2 tsp Paprika
2 tsp Black Pepper
1 tsp Cloves
1 tsp Allspice (Pimenton)
1 tsp grated Nutmeg
2 tsp dried Marjoram
1 tsp dried Sage

Method:

Simply combine all the ingredients in a spice blender or coffee grinder. Pulse to combine and to break up the herbs slightly (do not blend until smooth).

Transfer the spice blend to a jar and store in a cool, dark, cupboard until needed.
