Vermont Maple Spice Cupcakes: An American recipe for a spiced white cupcake made with sour cream that's finished with a cream cheese and maple syrup frosting and decorated with pecan nuts.
Ingredients:
275g plain flour
1 1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
3/4 tsp ground cloves
1/2 tsp freshly-grated nutmeg
4 tbsp butter
4 tbsp lard or vegetable shortening
300g brown sugar
2 eggs
250ml sour cream
120ml water
75g pecan nuts, chopped
For the Frosting:
240g cream cheese, softened (or you can use my
home-made cream cheese recipe to prepare your own)
100g butter, softened
275g icing sugar
4 tbsp maple syrup
18 pecan nut halves, to garnish
Method:
Stir together the flour, baking soda, baking powder, salt, cinnamon, cloves and nutmeg in a bowl.
In another bowl, cream together the butter, lard (or shortening) and sugar until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.
Now beat in the sour cream and water. Still beating constantly, gradually add the flour mixture, beating until smooth and well combined. Finally stir in the nuts.
Line 18 muffin cups with papers then divide the batter between them.
Transfer to an oven pre-heated to 170°C and bake for about 20 minutes, or until the tops are lightly golden and a skewer inserted into the centre emerges cleanly.
Transfer the baked cupcakes to a wire rack and set aside to cool.
For the frosting, combine the butter and cream cheese in a bowl and beat until smooth and fluffy. Gradually work in all the icing sugar then add the vanilla extract and maple syrup. Continue beating until the mixture is smooth and creamy.
When the cupcakes have cooled decorate with the frosting, then garnish each cupcake with a pecan nut half.
