This is a Mexican recipe, also common in California for a dish of common purslane that's fried and cooked with cheese.
Ingredients:
1l purslane, including stems
100g Monterey Jack cheese, grated
Method:
Collect tender purslane leaves an stems. Carefully rinse the greens to remove and sand or grit. Bring a pan of lightly-salted water to a boil, add the purslane and blanch for 2 minutes, or until tender. Drain then chop into small pieces.
Add a little oil to a frying pan, stir in the purslane and fry for 2 minutes then spread the cheese over the top. Continue cooking until the cheese just melts (be careful not to over-melt the cheese). Serve immediately.
