Vegetable Ndiwo

Ingredients:

600g mixed greens (eg cassava leaves, sweet potato leaves, bean leaves, pumpkin leaves, Chinese cabbage, mustard leaves, rape leaves, kale, cabbage, collard greens) finely chopped
1 small onion, chopped
1 tbsp oil
2 tomatoes, chopped
250ml water
salt, to taste

Method:

Fry the onions in the oil until soft then add all the remaining ingredients, bring to a boil, cover the pan and reduce to a simmer. Cook on medium heat for 5 minutes until the greens are tender.

Serve with rice or Nsima.
