Varenga (Roast, Shredded, Beef) is a traditional Madagascar recipe for a classic dish of steak boiled with onions that's shredded and oven-baked before serving with rice. The full recipe is presented here and I hope you enjoy this classic Madagascar version of: Roast, Shredded, Beef (Varenga).

Ingredients:
1.8l chuck steak, cut into 3cm pieces
1l water
2 tbsp salt
2 garlic cloves, finely minced
200g onions, sliced
Method:
Combine all the ingredients in a large saucepan, cover and bring to a boil, reduce to a simmer and cook for 2 hours. Remove the meat from the pan, shred by cutting into thin strips then transfer the meat and stock to a greased 22 x 30cm oven-proof baking pan. Place in the centre of an oven pre-heated to 200°C (400°F/Gas Mark 6) for 30 minutes, until the dish is nicely browned across the top.
Serve on a bed of rice, garnished with sprigs of parsley.
