Vanilla Frozen Yoghurt: Classic American recipe for a low-fat frozen yoghurt made from a blend of sugar, evaporated milk, egg, syrup, vanilla, vanilla extract and yoghurt thickened with cornflour (cornstarch) that's churned to freeze and piped to serve with a garnish of raspberries.
Combine the sugar and cornflour in a medium saucepan. Add the milk, beaten egg and golden syrup then stir to combine. Cook over very low heat, stirring constantly, until the mixture thickens sufficiently to coat the back of a metal spoon.
Take off the heat an set aside to cool. Once cold split the vanilla pod lengthways and scrape out the seeds into the custard mixture then beat in the vanilla extract and the yoghurt. Refrigerate the mixture until chilled then transfer to an ice cream maker and process according to the manufacturer's directions.
