Vakalolo is a traditional Fijian pudding made from grated cassava.
Ingredients:
900g freshly-grated cassava
250g freshly-grated coconut
1cm fresh
ginger, grated
220g sugar
6 cloves
Method:
Toast the cloves in a dry frying pan until fragrant, then grind.
Mix all the ingredients together and divide into four equal parts. Wrap in banana leaves or greaseproof paper and steam for 40 minutes.
Unwrap and serve immediately.
