This is a curry made in the French style (it's Franco-Indian in fact), with Vadouvan as the spice blend and with the addition of coconut milk as well as Thai red curry paste, making this a melange of Indian and southeast Asian styles.

Ingredients:

1 tbsp extra virgin olive oil
1 tbsp Vadouvan curry powder
1 tsp red curry paste
2 garlic cloves, minced
1 tbsp tomato purée
500g (1 lb) chicken, cut into bite-size pieces
1/2 tsp sea salt
1/4 tsp freshly-ground black pepper
125ml (1/2 cup) unsweetened coconut milk

Method:

Heat oil in a cast iron casserole or a deep heavy-based frying pan over medium-high heat.

Once hot scatter over and stir in the Vadouvan curry powder, stir-frying for aboout 90 seconds, until fragrant.

Add the curry paste, garlic and tomato purée then stir to combine and continue cooking, stirring constantly, for 90 seconds more.

Season the chicken pieces with salt and black pepper then add to the pan and toss to coat in the curry mixture.

Reduce the heat to medium and cook the chicken for about 6-8 minutes, until no longer pink in the middle.

Now pour in the coconut milk, bring everything to a simmer and cook for 10-12 minutes until the gravy has thickened to your liking.

Serve on a bed of rice and accompany with vegetables.
