Rav Uppuma

This is a classic dish of Tamil cuisine. A vegetarian curry with semolina that's made both in South India and Sri Lanka.

Ingredients:

250g (2 cups) semolina (slightly roasted)
2 dry chillies, chopped
4 red onions, chopped
few curry leaves
1/2 tsp mustard seeds
3cm (1 in) piece of ginger, scraped and chopped
2 tbsp oil
150g (1 cup) mixed vegetables (eg. leeks, carrot, boiled potato, tomato), chopped
250ml (1 cup) boiling water
salt to taste

Method:

Place a curry pan or wok over medium heat. Add the oil and when hot use to fry the the mustard seeds, dried chillies, onions and curry leaves for 6-8 minutes or until the onions are golden brown.

Add the vegetables, ginger and salt and fry for a further minute.

Now add the boiling water, bring back to a boil, cook for 1 minute then reduce the heat. Stir in the semolina a little at a time. As soon as the semolina has all been incorporated and the mixture is smooth, cover the pan and cook for 1 minute.

Serve hot.
