Upma is a traditional Indian recipe for a classic dish of potatoes, tomato, onion and semolina flavoured with mustard, green chillies and mango powder that's typically served for breakfast. The full recipe is presented here and I hope you enjoy this classic Indian version of: Upma.
Add the semolina to a heavy pan on medium heat and toast until a light brown in colour then transfer to a plate. Heat the oil in the pot, add the onion and mustard seeds. Fry until the onions become a golden brown in colour. Add the chopped potatoes, cover and cook on a low heat.
When the potatoes are completely cooked (about 20 minutes) add the chopped tomatoes, chillies, chilli powder and salt. Stir these in.
Now add the cooked semolina to a pan and add double the volume of water (about 600ml). Mix well, cover and cook on medium heat. Cook for about 10 minutes then stir-in the contents of the frying pan. Cook for a further five minutes, stirring frequently to make certain everything's thoroughly mixed. Take off the heat, add the lemon juice, plate out and sprinkle with chopped coriander leaves.
