Ujeni is the Malian word for 'whatever' and, essentially this dish is made with whatever is at hand. The base recipe comes from neighbouring Mozambique but is has entered the Malawian mainstream where it's often served during Lent.
Ingredients:
1 small onion, chopped
1 tbsp vegetable oil
2 medium tomatoes, chopped
200g rape (or your favourite) greens, finely shredded
2 tsp curry powder
1 1/2 tsp ground ginger
1 tbsp milk powder
salt, to taste
Method:
Heat the oil in a pan and use to fry the onions for about 6 minutes, or until lightly coloured. Scatter over the curry powder and ginger and stir to combine then work in 200ml water. Bring to a simmer and cook for a few minutes then add the tomatoes.
Bring back to a simmer and cook for 5 minutes more then sprinkle over the milk powder. Stir until smooth then add the greens. Cover the pan and simmer over low heat for 5 minutes.
