Ugandan Rolex

This classic Ugandan street food became rather famous a few years back. Though the hype has died away, this is remains a rather wonderful dish. Ugandan Rolex is basically an omelet rolled inside a chapati. Sort of like a wrap. The omelette is fried with onions, tomatoes and cabbage, others add carrots and bell pepper.

Ingredients:

2 eggs
60g (1/4 cup) green cabbage (thinly sliced)
50g (1/4 cup) tomatoes (seeds removed and finely diced)
1 tbsp red onions (minced)
Salt, to taste
vegetable oil
1 large chapati
hot chilli and sliced tomatoes (optional to garnish)

Method:

Crack the eggs into a large mug. Add the cabbage, tomato, red onion, and salt. Stir together with a spoon until well combined.

Preheat a large non-stick pan over medium-high heat (it must be big enough to hold the chapati flat). Oil well then add the eggs and spread out into a flat circle with the back of your spoon. Let then cook until mostly set and the bottom is browned.

Flip and cook on the other side for a couple of minutes. Top with chapati to warm it up. Remove from pan and, when cool enough to handle, roll it up.

There you have your rolex!
