Tzatziki (Yoghurt, Cucumber and Garlic Dip) is a traditional Greek recipe for a classic dip or dressing made from a mix of yoghurt, cucumber and garlic with olive oil, vinegar and dill. Ingredients:
500ml strained full-fat plain yoghurt
1 medium cucumber, peeled and grated
4 garlic cloves, peeled and mashed to a paste
2 tbsp olive oil
salt and freshly-ground black pepper, to taste
a little vinegar
2 tsp fresh dill weed, finely chopped
a few ripe olives
Method:
Place the grated cucumber in a cloth and squeeze as much excess liquid as possible out of it.
Combine the cucumber with the remaining ingredients and turn into a bowl. Garnish with the olives and serve.
