Turrón de Alicante (Alicante Nougat)

This is a classic nougat recipe from Spain. Though it is made and served throughout the year, like most Spanish nougat it is most commonly associated with Christmas and is often prepared as a gift.

Ingredients:

150g sugar
1 egg white
250g honey
500g almonds

Method:

Arrange the almonds on a baking tray then transfer to an oven pre-heated to 180°C and toast for about 6 minutes, or until lightly golden.

Allow the nuts to cool then slice each one lengthways into three pieces.

Place the sugar in a pan with 250ml water and heat gently, stirring constantly, until the sugar has dissolved. Stir in the honey and bring to a boil. Now cook, shaking the pan frequently, but not stirring, until the syrup reaches 154°C, as measured on a confectioner's thermometer.

In the meantime, beat the egg whites in a clean and dry bowl until stiff. Add to the syrup along with the almonds. Mix until thoroughly blended then pour into wafer-shaped moulds lined with greaseproof (waxed) paper.

Allow the nougat to harden and set then turn out of the moulds and remove the waxed paper. Slice the nougat into lengths and store.

This makes an excellent home-made Christmas gift.
