Turnip Top Soup is a traditional British recipe for a classic soup made from turnip tops and rice cooked in a mix of white stock and strong chicken stock. The full recipe is presented here and I hope you enjoy this classic British version of: Turnip Top Soup.

Ingredients:
250g turnip tops, finely shredded
1 large onion, chopped
2 medium potatoes, diced
40g butter
1 tbsp flour
1 tsp curry powder
1l white stock
500ml strong chicken stock
40g rice
(reserve some tender turnip leaves to shred and garnish)
Method:
Add the butter to a pan and use to fry the onion until soft and translucent (about 5 minutes). Blend the flour into the butter and add the curry powder. Fry, stirring all the while, for 1 minute then add the stocks a little at a time and mix to blend in. Add the potatoes and rice, bring to a boil and cook for 10 minutes. Now add the turnip tops and continue cooking for 15 minutes.
Add the reserved turnip leaves and cook for a further 5 minutes before ladling into warmed soup bowls and serving.
