Laza Hot Sauce, also known as Lazadzhan (Лазаджан), is a traditional Dungan and Uyghur Asian Chilli and Garlic Sauce from Central Asia. Not typical Chili Oil, but a different Chilli-Garlic Sauce that's not really well known outside of Central Asia (including adjoining regions of China and Russia). This is traditionally associated with the Uyghur and Dungan (Hui) ethnic groups.
Ingredients:
250ml (1 cup) finely chopped dried chillies or fresh chillies or chillies or ground chilli powder
1 large head of garlic, cloves separated, peeled and minced
5 tbsp of hot oil
1 tsp salt
Method:
Chop the whole chillies into small, coarse, pieces.
Transfer to a small heatproof bowl (not plastic). A pyrex measuring cup or bowl works well, or a ceramic bowl. Add the minced garlic and salt
In a saucepan, heat the oil until it is very hot (starting to smoke). Be careful not to start a fire or burn yourself with the hot oil.
Carefully pour the oil into the chilli mixture and mix. Do it in 2-3 stages, waiting a few seconds between pours as it bubbles. Mixing to combine after each addition.
Allow the Laza Hot Sauce or Lazadzhan to cool and store in a glass jar in the refrigerator.
