You simply cannot have a list of Christmas dishes that make the most of left-over turkey without including turkey and chips (French fries) in the list. Admittedly this is not so much a recipe as a way to put the ingredients together, but its a true classic and deserves to be disseminated.
Ingredients:
1 roast turkey carcass, room temperature
1 batch Belgian fries
1 batch baked beans
salt and freshly-ground black pepper
vinegar, to serve
English mustard, to serve
Method:
Prepare the baked beans beforehand and either freeze or store in the refrigerator, as needed. Carve and/or joint the bird (I reserve the wings especially for this dish).
Prepare the chips (french fries) according to the Belgian fries. Plate out the meat, add the chips and baked beans then season to taste with salt, freshly-ground black pepper and vinegar. Add a generous dollop of English mustard and serve.
