Tunu Ahi Ika

This is a traditional way to prepare fish (typically tuna) by baking on hot volcanic rocks. This can be part-replicated at home by using a barbecue to heat rocks and cooking the food on the rocks.

Ingredients:

Fresh fish fillets, scaled
Sweet potatoes
Banana (do not peel)

Method:

Pre-heat your barbecue then place volcanic rocks on top of the coals. The coals will heat the rocks.

When the rocks are hot, brush with oil then add the sweet potatoes first (they take longer to bake). After about 20 minutes add the fish and bananas. Turn the sweet potatoes over and continue cooking for 10 minutes.

At this point turn the bananas over and cook for 10 minutes more.

Serve the fish fillets accompanied by a banana and a halved sweet potato.
