Tuna and Caramelized Onion Pâté is a traditional British recipe for a classic starter of a blend of tinned tuna with caramelized onions served with toasted bread.

Ingredients:

3 tbsp olive oil
3 large onions, thinly sliced
1 tbsp fresh flat-leaf parsley, finely chopped
200g tin of tuna in oil
salt and freshly-ground black pepper, to taste
toasted bread, or bread sippets or melba toast, to accompany

Method:

Heat the olive oil in a large, heavy-based saucepan over very low heat. Add the onions and cook gently for 60 minutes, stirring occasionally, or until the onions are very soft and just starting to turn golden.

Take off the heat then turn into a bowl and add the onions, parsley and tuna (along with the oil from the tin). Season to taste and mash with a fork.

If you like a smother pâté, combine all the ingredients in a food processor and pulse until the mixture reaches your preferred consistency.

Turn into a serving bowl and serve hot, accompanied by your preferred type of toast.
