Melba Toast
Melba Toast is a traditional British recipe for a classic form of toast that's grilled (broiled) and then split lengthways before the untoasted sides are cooked which yields a crispy final product typically served as an accompaniment to starters. These are crisply-toasted slices of bread that make an excellent accompaniment to soup and are often served as a starter with pâté.
Ingredients:
8 slices white bread
Method:
Pre-heat your grill (broiler) on high and use to toast the bread lightly on both sides. Remove the crusts from the bread and very carefully, using a sharp knife split each slice of bred lengthways into 2 slices (so that you now have 18 slices that that are only toasted on each side).
Place the slices you've just made back under the grill and cook the un-toasted side until crisp. The sides of the bread will curl as a result, and this is the effect you are after.
Serve immediately with soup, pâté and terrines. You can also make Melba toast earlier in the day. Set them aside and warm in an oven pre-heated to 170°C for a few minutes before serving.
