A bake is a quick and easy to prepare fried bread that forms the basis of the classic Trinidadian shark and bake dish; literally fried shark served on a bread base which is the Trinidadian equivalent of British Fish and Chips.

Ingredients:

300g plain flour
2 tsp baking powder
1 tsp salt
100g butter, softened
1 tsp sugar
water to bind
vegetable oil, for frying

Method:

Sift together the flour, baking powder and salt into a bowl. Add the butter and sugar and stir with a fork to combine. Now add just enough water to bring the ingredients together as a slightly soft dough. Turn onto a lightly-floured work surface and knead gently until elastic.

Cut the resultant dough into 4 or 6 pieces (depending on the size of the fish pieces you want to lay on the bakes). Roll each piece in a ball then set aside to rest for a few minutes. When done flatten the balls until about 6mm thick.

Heat oil in a wok and use to fry the bakes until brown. Remove and drain on kitchen towels then slice lengthways and top with shark, or your choice of filling.
