I love ginger beers made simply with pounded ginger I have recipes from several countries on this site now and it's a pleasure to finally publish this classic Trinidadian version.
Ingredients:
450g ginger, peeled
650g golden granulated sugar
cloves, as needed
Method:
Roughly chop the ginger and add to a blender. Combine with a little water and blend to a paste (add enough water, as needed, to get a smooth pulp).
Transfer the pulp to a large glass bottle, secure a lid and set aside in the sun to steep for 2 days. At this time strain though a sieve lined with muslin or cheesecloth. Transfer a handful of the ginger to a mortar, add a little water and pound with the pestle. Repeat the process with the remaining ginger. Transfer to a bowl and stir-in about 800ml water. Strain and discard the ginger.
Combine all the ginger liquid and make up to about 5l. Pour this into a large pot, add the sugar and heat gently until the sugar dissolves. Take off the heat, allow to cool then our into clean bottles. Add 4 cloves per bottle then set aside to rest at room temperature for 2 days before refrigerating. Drink chilled.
