Les beignets de Tréguier (Tréguier Apple Fritters)
Les beignets de Tréguier (Tréguier Apple Fritters) is a traditional French recipe (from Brittany) for a classic fritter of a pancake-style batter containing apple piece. These little fritters are a speciality of the Tréguier region of Brittany. The apples are incorporated directly into the batter, before being pan fried in butter. Though I have suggested rum for this recipe, you could also use calvados or better still Fine Bretagne (also called Lambig, a Breton apple brandy).
Ingredients:
3 pippin type apples, peeled, halved, cored and finely diced
3 eggs
3 tbsp of flour
3 tbs[ of powdered sugar
250ml of milk
50ml of Rum
Method:
Place the chopped apple pieces in a bowl and sprinkle over the rum.
In a mixing bowl, combine the flour, eggs, sugar and milk, whisking to obtain a smooth pancake-like batter. Now stir in the apple pieces and rum.
Place a pan over medium-high heat. When the pan is hot, add a generous knob of butter. When the butter is foaming swirl the pan to cat the base in butter, return to the heat and add about half a ladleful of the apple batter. Cook for a few minutes, until coloured on the base then cook on the other side. When nicely coloured and cooked through transfer to a warmed plate and sprinkle with a little powdered sugar.
Add more butter to the pan and continue frying the remainder of the batter in the same manner until all the batter is used up.
To finish, heat your grill (broiler) to medium. Place the beignets under the grill and heat for about 5 minutes both to warm them up and to caramelize the sugar on top.
Serve warm.
