This is the classic, traditional version of pommé (Breton apple cake) from Renes. The modern version is made with puff pastry, but this one is baked in a batter with a consistency part way between Far and Breton Cake.

Ingredients:

500g of apples, peeled and sliced into large cubes
350g powdered sugar
250g of flour
180g butter
600ml of whole milk
2 eggs
1 sachet (11g) of baking powder
1 sachet (7g) of vanilla sugar
1/2 teaspoon of Salt

Method:

In a bowl, beat together the milk and eggs. Add the sugar and beat until the mixture is pale and thick. Sift over the flour and baking soda then mix in to the liquid ingredients with a wooden spoon.

Add the softened lightly-salted butter, and when combined add the milk. Stir to combine then fold in the apple pieces.

Scrape the resultant batter into a greased and floured springform cake tin. Transfer to the centre of an oven pre-heated to 200°C and bake for 45 minutes, until the top of the cake is golden and the cake is cooked through.

Remove the apple cake from the oven and immediately sprinkle with vanilla sugar. Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.
