Toscanita de Ciuperci (Sautéd Mushrooms) is a traditional Romanian recipe for a classic dish of wild mushrooms fried with onions and finished in a tomato-based sauce flavoured with parsley. Ingredients:
450g wild mushrooms, sliced
2 small onions, diced
100ml passata (tomato juice)
5 tbsp fresh parsley, chopped
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Add a little oil to a pan and when hot use to fry the onions until soft and just golden (about 10 minutes). Stir-in the mushrooms and continue to fry until the mushrooms are soft. Add the passata, salt, black pepper and parsley.
Bring the mixture to a simmer and cook for 15 minutes, or until all the ingredients are cooked through.
