Tomato and Bladderwrack Sauce

This is a modern variant of a pizza sauce topping that has real depth of flavour due to the inclusion of both sun-dried tomatoes and ground, dried, bladderwrack that acts both as a flavouring and thickener.

Ingredients:

440g tinned, chopped, tomatoes
100g sun-dried tomatoes, finely diced
1 tbps ground, dried bladderwrack
1/2 red onion, finely chopped
2 garlic cloves, sliced
2 tbsp olive oil
1 tsp dried oregano, crumbled
1 tsp dried basil, crumbled
salt and freshly-ground black pepper, to taste

Method:

Heat the oil in a pan, add the onion and fry until softened (about 5 minutes) then add the garlic and sun-dried tomatoes then fry for 2 minutes more. Stir in the chopped tomatoes and bring the mixture to a simmer.

Cook for about 5 minutes then stir-in the ground, dried, bladderwrack. Season to taste with salt, black pepper and the dried basil and oregano. Bring to a boil and cook until reduced and thickened (about 15 minutes). Take off the heat and allow to cool before using as a topping for pizzas.
