Tomates Monégasque (Monegasque Tomatoes) is a traditional Monegasque (from Monaco) recipe for a classic starter or supper dish of tomatoes stuffed with a blend of tuna, hard-boiled eggs and mixed vegetables in a lightly-spiced mayonnaise base. Ingredients:

8 large tomatoes
200g tinned tuna
2 hard-boiled eggs
400g tinned mixed vegetables
150ml (about) mayonnaise
2 tsp Dijon mustard
2 garlic cloves, minced
1 tsp herbes de Provence
salt and freshly-ground black pepper, to taste

Method:

Carefully cut holes on the top of the tomatoes then scoop out the insides season with salt, invert and set aside to drain.

Chop the eggs, add to a bowl and mash with a fork. Drain and add the tuna then mix together. Stir in the mixed vegetables then mix together the mayonnaise and mustard and mix together to bind.

Work in the garlic and herbs then season to taste. Fill the tomatoes with the stuffing, chill in the refrigerator and serve as a starter or as part of a supper dish.
