Togolese Yam Fufu

Ingredients:

4 large yams
Salt to taste

Method:

Peel the yams then cut into chunks. Place in a large pan and pour over enough water to cover the yam pieces.

Bring to a boil over medium heat and continue cooking for about 30 minutes, or until the yam is fork tender.

Drain the yams and whilst still hot transfer to a mortar. Pound with a pestle until they form a smooth, stretchy dough. Add salt to taste during this process.

Once you achieve the desired consistency, your fufu is ready to serve. Shape into balls and arrange on plates accompanied by your favourite soup or stew.
